  • 1 pound turkey sausage, casings removed
  • 1 cup cottage cheese
  • 1 cup shredded pepper jack cheese

  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 cup chopped bell peppers (any color)
  • 1/4 cup chopped green onions for garnish (optional)

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C).
  2. Cook the Sausage: In a large skillet over medium heat, cook the turkey sausage until browned and fully cooked, breaking it apart with a spatula as it cooks. Drain any excess fat.
  3. Mix the Egg Mixture: In a large bowl, whisk together the eggs, cottage cheese, milk, salt, pepper, garlic powder, and onion powder until well combined.
  4. Combine Ingredients: Stir in the cooked turkey sausage, chopped bell peppers, and shredded pepper jack cheese into the egg mixture.
