Ingredients

  • 1 cup unsalted butter
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 cup unsweetened cocoa powder
  • 1/2 teaspoon salt
  • 1 cup brewed coffee, cooled
  • 1 cup mascarpone cheese
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract (for mascarpone layer)
  • Cocoa powder for dusting

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. Make the Brownie Batter: In a large saucepan, melt the butter over low heat. Remove from heat and stir in the sugar, eggs, and vanilla. Beat in the flour, cocoa powder, and salt until just combined.
  3. Bake the Brownies: Pour the brownie batter into the prepared pan and spread evenly. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
  4. Prepare the Coffee Mixture: While the brownies are baking, mix the cooled coffee with a tablespoon of sugar if desired.
  5. Make the Mascarpone Layer: In a bowl, whisk together the mascarpone cheese, powdered sugar, and vanilla extract until smooth.
  6. Assemble the Brownies: Once the brownies are baked and cooled slightly, poke holes in the top with a toothpick and drizzle the coffee mixture over them. Spread the mascarpone layer on top and refrigerate for at least 2 hours.
  7. Serve: Dust with cocoa powder before cutting into squares and serving.
