Ingredients
- 1 pound ground beef
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (28 oz) crushed tomatoes
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 2-3 chipotle peppers in adobo sauce, chopped
- 2 tablespoons chili powder
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- 1 teaspoon salt, adjust to taste
- 1/2 teaspoon black pepper
- 1 cup beef broth
- 1 tablespoon olive oil
- Chopped cilantro and sour cream for garnish (optional)
Instructions
- Brown the Beef: In a large pot, heat olive oil over medium heat. Add the ground beef and cook until browned, breaking it apart with a spoon.
- Sauté Aromatics: Add the chopped onion and minced garlic to the pot. Sauté until the onion is translucent, about 3-4 minutes.
- Add Ingredients: Stir in the chipotle peppers, chili powder, cumin, smoked paprika, salt, and black pepper. Cook for another minute until fragrant.
- Combine: Add the crushed tomatoes, black beans, kidney beans, and beef broth. Stir well to combine.
- Simmer: Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for about 30 minutes, stirring occasionally.
- Slow Cooker Option: For a slow cooker, transfer the browned beef and sautéed vegetables to the slow cooker, add the remaining ingredients, and cook on low for 6-8 hours or high for 3-4 hours.
- Serve: Ladle the chili into bowls and garnish with chopped cilantro and a dollop of sour cream if desired.
