This soup features roasted cauliflower and leeks blended together for a smooth texture, enhanced by a hint of smokiness. The recipe takes about 30 minutes from start to finish and serves 4 people.
Ingredients
- 1 medium head of cauliflower, cut into florets
- 2 medium leeks, cleaned and sliced
- 2 tablespoons olive oil
- 4 cups vegetable or chicken broth
- 1 cup cottage cheese
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- Chopped chives or parsley for garnish (optional)
Instructions
- Roast the Cauliflower: Preheat the oven to 400°F (200°C). Toss the cauliflower florets with olive oil, salt, pepper, and smoked paprika. Spread them on a baking sheet and roast for 20-25 minutes until tender and slightly browned.
