Healthy Smoky Cauliflower & Leek Soup Recipe

This soup features roasted cauliflower and leeks blended together for a smooth texture, enhanced by a hint of smokiness. The recipe takes about 30 minutes from start to finish and serves 4 people.

Ingredients

  • 1 medium head of cauliflower, cut into florets
  • 2 medium leeks, cleaned and sliced
  • 2 tablespoons olive oil
  • 4 cups vegetable or chicken broth
  • 1 cup cottage cheese
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Chopped chives or parsley for garnish (optional)

Instructions

  1. Roast the Cauliflower: Preheat the oven to 400°F (200°C). Toss the cauliflower florets with olive oil, salt, pepper, and smoked paprika. Spread them on a baking sheet and roast for 20-25 minutes until tender and slightly browned.
  2. Sauté the Leeks: In a large pot, add a little olive oil and sauté the sliced leeks over medium heat until softened, about 5 minutes.
  3. Combine Ingredients: Add the roasted cauliflower to the pot with the leeks. Pour in the broth and bring to a simmer.
  4. Blend the Soup: Use an immersion blender to puree the soup until smooth. If you prefer a chunkier texture, blend partially or leave some cauliflower pieces intact.
  5. Add Cottage Cheese: Stir in the cottage cheese and heat gently until warmed through. Adjust seasoning with salt and pepper as needed.
