This classic pot roast in the slow cooker features tender beef, carrots, potatoes, and onions that turn into a savory gravy—perfect for a Sunday dinner that also works for meal prep.

Using a slow cooker allows for easy preparation and rich flavors, making it an ideal choice for fall and winter crockpot recipes.

Delicious Slow Cooker Pot Roast Recipe

This pot roast is slow-cooked to perfection, allowing the beef to become tender while the root vegetables absorb the flavors. The recipe takes about 8 hours in the slow cooker and serves 6 people.

Ingredients

  • 3 to 4 pounds beef chuck roast
  • 4 medium carrots, peeled and cut into chunks
  • 4 medium potatoes, peeled and diced
  • 1 large onion, quartered
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon dried thyme
  • 1 tablespoon dried rosemary
  • 1 teaspoon salt, adjust to taste
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 tablespoon cornstarch (optional, for thickening gravy)
  • Fresh parsley for garnish (optional)

Instructions

  1. Sear the Roast: In a large skillet, heat olive oil over medium-high heat. Season the beef roast with salt and pepper, then sear on all sides until browned (about 3-4 minutes per side).
  2. Prepare the Slow Cooker: Place the carrots, potatoes, onion, and garlic in the bottom of the slow cooker. Pour the beef broth and Worcestershire sauce over the vegetables.
  3. Add the Roast: Place the seared roast on top of the vegetables. Sprinkle thyme and rosemary over the roast.
  4. Cook: Cover and cook on low for 8 hours or on high for 4-5 hours, until the beef is tender and easily shreds with a fork.
  5. Make the Gravy: If desired, remove the roast and vegetables from the slow cooker. Mix cornstarch with a little water to create a slurry, then stir it into the remaining liquid in the slow cooker. Cook on high for an additional 15-20 minutes until thickened.
  6. Serve: Slice the pot roast and serve with the root vegetables and gravy. Garnish with fresh parsley if desired.
