Delicious Spinach & Cheddar Hash Brown Casserole

This casserole features layers of crispy hash browns, sautéed spinach, and melted cheddar cheese, baked to perfection. It takes about 1 hour to prepare and serves 6 people, making it a great option for family gatherings or weekend brunch.

Ingredients

  • 1 package (30 oz) frozen hash browns, thawed
  • 2 cups fresh spinach, chopped
  • 1 cup shredded cheddar cheese
  • 6 large eggs
  • 1 cup milk
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1/2 cup diced onion
  • 1/2 cup diced bell pepper (optional)

Instructions

  1. Preheat the Oven: Preheat your oven to 375°F (190°C).
  2. Sauté Vegetables: In a skillet, heat olive oil over medium heat. Add diced onion and bell pepper (if using) and sauté until softened, about 5 minutes. Add chopped spinach and cook until wilted, about 2 minutes. Remove from heat.
  3. Prepare Hash Brown Base: In a large mixing bowl, combine thawed hash browns with half of the shredded cheddar cheese, garlic powder, onion powder, salt, and pepper. Spread the mixture evenly in a greased 9×13 inch baking dish.
