Easy Tonkotsu Ramen Recipe

This tonkotsu ramen features a deeply flavored broth that takes time to develop but is well worth the effort. The recipe serves about 4 people and can be customized with your favorite toppings like soft-boiled eggs, green onions, and nori.

Ingredients

  • 2 lbs pork bones (neck bones or trotters)
  • 1 onion, halved
  • 1 head of garlic, halved
  • 1 piece of ginger (2 inches), sliced
  • 8 cups water
  • 4 servings of ramen noodles
  • Soy sauce, to taste
  • Salt, to taste
  • Toppings: soft-boiled eggs, sliced chashu pork, green onions, nori, sesame seeds

Instructions

  1. Prepare the Broth: In a large pot, add the pork bones and cover with water. Bring to a boil and then simmer for 10 minutes. Drain and rinse the bones to remove impurities.
  2. Simmer the Broth: Return the cleaned bones to the pot with 8 cups of fresh water, onion, garlic, and ginger. Bring to a boil, then reduce to a simmer. Cook for at least 12 hours, adding water as necessary to keep the bones submerged.
  3. Cook the Noodles: In a separate pot, cook the ramen noodles according to package instructions. Drain and set aside.
  4. Strain the Broth: Once the broth is ready, strain it through a fine mesh sieve to remove solids. Return the liquid to the pot and season with soy sauce and salt to taste.
  5. Assemble the Ramen: In bowls, place a serving of noodles, ladle the hot broth over the noodles, and add your desired toppings such as soft-boiled eggs, chashu pork, green onions, nori, and sesame seeds.
  6. Serve: Enjoy your homemade tonkotsu ramen hot, paired with additional soy sauce or chili oil if desired.
