Ingredients

  • 1 1/2 cups almond flour
  • 1/4 cup erythritol or preferred sweetener
  • 1/2 cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup pumpkin puree
  • 1/2 cup sour cream
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon salt
  • 1/4 cup brewed espresso, cooled
  • 2 tablespoons cocoa powder (optional for swirl)

Instructions

  1. Preheat the Oven: Preheat your oven to 325°F (160°C) and line an 8×8 inch baking pan with parchment paper.
  2. Make the Crust: In a bowl, combine almond flour, erythritol, and melted butter. Press the mixture into the bottom of the prepared pan to form an even layer.
