Ingredients:

  • 2 lbs Russet or Yukon Gold Potatoespeeled and quartered
  • 1/2 cup Milk or Creamwarmed
  • 4 tbsp (1/2 stick) Unsalted Buttersoftened
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper
  • (Optional) 1 Egg Yolkfor a richer, golden topping
  • 1 tbsp Olive Oil
  • 1 large Onionfinely chopped
  • 2 Carrotspeeled and diced small
  • 2 Celery Stalksdiced small
  • 2 cloves Garlicminced
  • 1.5 lbs Ground Lamb
  • 1 tbsp All-Purpose Flour (for thickening)
  • 1 cup Beef or Lamb Broth
  • 1 tbsp Tomato Paste
  • 1 tbsp Worcestershire Sauce
  • 1 tsp Dried Rosemary
  • 1 tsp Dried Thyme
  • 1/2 cup Frozen Peas
  • 1/2 cup Frozen Corn
  • Salt and Black Pepper

Instructions:

  1. Prepare Mashed Potatoes: Place the peeled and quartered potatoes in a large pot and cover with cold, salted water. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until fork-tender. Drain the potatoes well and return them to the pot.
  2. Mash Potatoes: Add the warmed milk/creamsoftened butter1/2 tsp salt, and 1/4 tsp black pepper to the potatoes. Mash until smooth and creamy. (For an extra rich and golden topping, stir in the optional egg yolk at this point). Set aside.
  3. Preheat Oven: Preheat your oven to 400°F (200°C).
  4. Sauté Vegetables: Heat 1 tbsp olive oil in a large oven-safe skillet (cast iron is great) or Dutch oven over medium heat. Add the chopped oniondiced carrots, and diced celery. Cook, stirring occasionally, for 8-10 minutes, until softened. Add the minced garlic and cook for another minute until fragrant.
  5. Brown Meat: Add the ground lamb or beef to the skillet. Cook, breaking it apart with a spoon, until browned and cooked through, about 7-10 minutes. Drain off any excess fat.
  6. Create Sauce Base: If using, sprinkle the all-purpose flour over the meat and vegetables and stir for 1 minute. Gradually stir in the beef or lamb brothtomato paste, and Worcestershire sauce. Bring to a simmer, scraping up any browned bits from the bottom of the pan.
  7. Season and Simmer Filling: Stir in the dried rosemary and dried thyme. Season with salt and black pepper to taste. Reduce heat to low and let the filling simmer for 10-15 minutes, or until it has thickened slightly and the flavors have melded.
  8. Add Frozen Veggies: Stir in the frozen peas and optional frozen corn. Cook for another 2-3 minutes until heated through.
  9. Assemble Shepherd’s Pie: If your skillet is not oven-safe, transfer the meat filling to a 9×13 inch baking dish or a similar-sized casserole dish. Spoon the prepared mashed potato topping evenly over the meat filling. Use a fork to create decorative swirls or peaks on top of the potatoes (this helps them brown nicely).
  10. Bake: Place the Shepherd’s Pie in the preheated oven. Bake for 20-30 minutes, or until the filling is bubbly around the edges and the mashed potato topping is lightly golden brown. (If your topping isn’t browning as much as you’d like, you can place it under the broiler for the last 1-2 minutes, watching carefully to prevent burning).
  11. Rest and Serve: Remove from the oven and let the Shepherd’s Pie rest for 10-15 minutes before serving. This allows the filling to set slightly and makes it easier to serve. Serve hot and enjoy this ultimate comfort food!

Recipe Notes:

  • Meat Choice: Traditionally, Shepherd’s Pie is made with ground lamb. If you use ground beef, it’s technically called a “Cottage Pie,” but both are equally delicious!
  • Mashed Potato Perfection: For the fluffiest mashed potatoes, make sure to drain them very well after boiling. Don’t overmix them, as this can make them gluey.
  • Vegetable Variety: Feel free to add other finely diced vegetables to the filling, such as mushrooms, parsnips, or leeks.
  • Flavor Boosters: A splash of red wine can be added to the filling along with the broth for extra depth of flavor. A bay leaf can also be simmered with the filling (remove before topping with potatoes).
  • Make-Ahead: You can prepare the meat filling and the mashed potato topping separately a day in advance. Store them covered in the refrigerator. Assemble and bake as directed, adding a few extra minutes to the baking time if assembling cold.
  • Freezing: Assembled and baked (or unbaked) Shepherd’s Pie can be frozen. Cool completely, then wrap tightly in plastic wrap and foil. Freeze for up to 3 months. Thaw overnight in the refrigerator before baking or reheating.
  • Oven-Safe Skillet: Using an oven-safe skillet (like cast iron) means one less dish to wash!

And there you have it – a truly comforting and delicious Homestyle Shepherd’s Pie that’s sure to warm hearts and satisfy appetites! This classic family dinner is a wonderful way to enjoy simple ingredients transformed into something incredibly special. We hope you delight in every cozy, savory bite! Happy cooking!
