Ingredients

  • 1 pound boneless, skinless chicken breasts, diced
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup cottage cheese
  • 1 cup heavy cream
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt, adjust to taste
  • 1/2 teaspoon black pepper
  • 1 pound gnocchi
  • 1 cup spinach, chopped
  • 1/2 cup grated Parmesan cheese, for garnish

Instructions

  1. Sauté Chicken: In a large pot, heat olive oil over medium heat. Add diced chicken and cook until browned and cooked through, about 5-7 minutes. Remove and set aside.
  2. Cook Aromatics: In the same pot, add chopped onion and garlic. Sauté until the onion is translucent, about 3-4 minutes.
  3. Add Broth: Pour in the chicken broth and bring to a boil. Reduce heat and let simmer for 5 minutes.
  4. Blend Base: Stir in cottage cheese and heavy cream. Use an immersion blender to blend until smooth, or transfer to a blender and blend carefully.
  5. Add Gnocchi: Bring the mixture back to a simmer and add the gnocchi. Cook according to package instructions, usually about 2-3 minutes.
  6. Finish Soup: Stir in the cooked chicken, chopped spinach, Italian seasoning, salt, and pepper. Cook until the spinach wilts, about 2 minutes.
  7. Serve: Ladle the soup into bowls and garnish with grated Parmesan cheese before serving.
