Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup panko breadcrumbs
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • Salt and pepper to taste
  • Vegetable oil for frying
  • 2 cups cooked rice
  • 1 onion, finely chopped
  • 2 carrots, sliced
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 tablespoons curry powder
  • 2 cups chicken broth
  • 1 tablespoon soy sauce
  • 1 tablespoon honey
  • 1 tablespoon cornstarch mixed with 2 tablespoons water (optional for thickening)

Instructions

  1. Prepare the Chicken: Season the chicken breasts with salt and pepper. Dredge each piece in flour, dip in beaten eggs, and coat with panko breadcrumbs.
  2. Fry the Chicken: Heat vegetable oil in a large skillet over medium heat. Fry the chicken cutlets until golden brown and cooked through, about 4-5 minutes per side. Remove and drain on paper towels.
  3. Make the Curry Sauce: In the same skillet, add a bit more oil if needed, and sauté the onion, carrots, garlic, and ginger until softened. Stir in the curry powder and cook for another minute.
  4. Add Broth and Simmer: Pour in the chicken broth, soy sauce, and honey. Bring to a simmer and cook for about 10 minutes. If desired, add the cornstarch mixture to thicken the sauce.
  5. Serve: Slice the fried chicken and place it over a bed of rice. Pour the curry sauce over the chicken and rice. Enjoy your hearty meal!
