Delicious Cranberry Balsamic Braised Short Ribs

Ingredients

  • 4 pounds beef short ribs
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 cup cranberry juice
  • 1/2 cup balsamic vinegar
  • 1/4 cup brown sugar
  • 2 cups beef broth
  • 1 teaspoon fresh thyme or 1/2 teaspoon dried thyme
  • 1 bay leaf
  • Fresh parsley for garnish

Instructions

  1. Prepare the Ribs: Season the short ribs with salt and pepper on all sides.
  2. Sear the Ribs: In a Dutch oven, heat olive oil over medium-high heat. Add the short ribs and sear until browned on all sides, about 3-4 minutes per side. Remove the ribs and set aside.
  3. Sauté Aromatics: In the same pot, add chopped onion and garlic. Sauté until the onion is translucent, about 3-5 minutes.
  4. Combine Ingredients: Stir in cranberry juice, balsamic vinegar, brown sugar, beef broth, thyme, and bay leaf. Bring to a simmer.
  5. Braise the Ribs: Return the short ribs to the pot, ensuring they are submerged in the liquid. Cover and transfer to a preheated oven at 325°F (160°C). Braise for 2.5 to 3 hours, or until the meat is tender and falls off the bone.
  6. Serve: Remove the ribs from the oven and let them rest for a few minutes. Skim excess fat from the sauce if necessary. Serve the ribs with the cranberry balsamic sauce drizzled over the top, garnished with fresh parsley.
