These quesadilla squares are made with a flavorful filling of ground beef and black beans, combined with spices for a kick. The recipe takes about 30 minutes from start to finish and serves 6 people.

Ingredients

  • 1 pound ground beef
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon chipotle chili powder
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 8 flour tortillas
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • Salsa and Greek yogurt for serving

Instructions

  1. Preheat the Oven: Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
  2. Cook the Beef: In a large skillet over medium heat, cook the ground beef until browned. Drain excess fat if necessary.
  3. Add Aromatics: Add the chopped onion and minced garlic to the skillet, cooking until the onion is translucent (about 3-4 minutes).
