Simple Cheesy Beef & Zucchini Casserole

This cheesy ground beef and zucchini enchilada bake features seasoned ground beef layered with zucchini, enchilada sauce, and cheese. It takes about 45 minutes to prepare and bake, serving 6 people.

Ingredients

  • 1 pound ground beef
  • 2 medium zucchinis, sliced
  • 1 can (10 oz) enchilada sauce
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Fresh cilantro for garnish (optional)

Instructions

  1. Preheat the Oven: Preheat your oven to 375°F (190°C).
  2. Cook the Beef: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until softened. Add the ground beef, cumin, chili powder, salt, and pepper. Cook until the beef is browned and cooked through, about 5-7 minutes.
  3. Layer the Ingredients: In a greased 9×13 inch baking dish, spread half of the enchilada sauce on the bottom. Layer half of the sliced zucchini, followed by half of the cooked ground beef mixture, and half of the cheese. Repeat the layers with the remaining ingredients.
  4. Bake: Cover the dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.
  5. Serve: Let the casserole cool for a few minutes before garnishing with fresh cilantro, if desired. Cut into squares and serve warm.
