Ingredients

  • 2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup vegetable oil
  • 1 cup buttermilk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup fresh blueberries
  • 1 cup white chocolate chips
  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract for frosting
  • Fresh blueberries for garnish (optional)

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour three 8-inch round cake pans.
  2. Mix Dry Ingredients: In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Combine Wet Ingredients: In another bowl, mix oil, buttermilk, eggs, and vanilla extract until well combined.
  4. Combine Mixtures: Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Gently fold in the fresh blueberries.
  5. Bake the Cakes: Divide the batter evenly among the prepared pans. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean. Allow cakes to cool in the pans for 10 minutes before transferring to wire racks to cool completely.
  6. Prepare the Frosting: In a microwave-safe bowl, melt the white chocolate chips. Let cool slightly. In a large bowl, beat the cream cheese and butter until smooth. Gradually add powdered sugar and vanilla extract, mixing until creamy. Stir in the melted white chocolate until well combined.
  7. Assemble the Cake: Once the cakes are completely cooled, place one layer on a serving plate. Spread a layer of frosting on top. Add the second cake layer and repeat the process. Top with the final cake layer and frost the top and sides of the cake.
  8. Garnish: Decorate the top with fresh blueberries if desired. Slice and serve.
